A tray prepared for 45 minutes at 20°C, refrigerated, displayed for 80 minutes at 15°C, refrigerated again, then served for 30 minutes at 18°C has spent 2h 35m in the zone — but the last interval on its own is only 30 minutes, and that is the number people read. At 2h 35m it must be used immediately and can no longer go back in the fridge; at 30 minutes it would look like it still could.
